I thought on this very important election day that this would be a good meal to post about, especially considering every time I try to say it it comes out like some bizarre political catch-phrase. What I mean to say is “Chicken Cacciatore”, but somehow it always comes out “Kitchen Catch-a-Tory.” You and I both know that no matter who wins the election today, it is very important to be ever vigilant against those Tories. We try to keep political discussion at a minimum here on 3broads’, but I myself am a die hard Whig and I don’t care who knows it.
I hope that I haven’t alienated any of our loyal Tory readers, but if I have, maybe you should consider doing the right thing and becoming a Whig already.
But enough political talk! On to the recipe!
This meal is simple, easy, and takes very little effort-just the way I like ‘em. Basically I just tossed a chopped onion, two chicken breasts, and a mixture of tomato paste, 1/4 cup white wine , 1/4 water, some chicken broth, and dried oregano and basil into the crock pot and let it simmer away! You do need to mix the wine, water, tomato paste and herbs together separately and pour over the chicken, and I threw in some chicken broth over the onions and chicken because I didn’t want everything to burn. Just leave it on low heat and when you come home there’s dinner waiting for you!
What a great meal! Except I discovered that neither my husband or children like Chicken Cacciatore. Which would have been nice to know before I made it. And of course I’m left to assume that they’re Tories, which makes things a little awkward. But the biscuits that I made from scratch were a bonafide hit, crossing the aisle (isle?) on taste.
Mmmm, just looking at that photo makes me hungry. They were buttery, flaky, and, as my daughter said “The best biscuits in the entire world, like, ever.”
I couldn’t have said it better myself.
So after you go out and vote, treat yourself and make some Kitchen Catch-a-Tory, and remember-no matter who wins today, 3broads’ will have your back as far as dinner is concerned.
